I had the pleasure of experiencing the 16 course festive menu at 2 Michelin star restaurant Aan de Poel in Amsterdam over the Christmas break.

This was a specially created menu which deviates from the usual, and goodness, it was special indeed.

Despite the chilly weather, Aan de Poel was decorated warmly with sparkling hanging ornaments and the welcome was also as such.

I also had the chance to chat to head chef Stefan Van Sprang, who greets each diner personally at their table. Stefan discussed his inspiration for the menu with me – it’s planned for two months beforehand and preference is given to excellent seafood produce, as that’s what the customer prefers. Think langoustine, crab, caviar. Since I’m slightly seafood obsessed, I wasn’t complaining.
